Rotisserie Chicken Carcass Vegetable Soup
1 rotisserie chicken carcass
1 box organic chicken broth
1 whole sweet onion, chopped
1 bunch parsley, minced
2 celery stocks, minced
Salt and pepper to taste
3 handfuls of vegetables, any kind (my cheaters… organic flash-frozen vegetables)
In a large pot put place the chicken carcass, chicken broth and enough water to cover. Add onion, parsley and celery. Bring to a boil and simmer for at least 2 hours.
Using a strainer, pour soup over and into another pot. Add vegetables, and you may want to add rice. Cook on low until all is tender. Oh yum!
