Texas Coleslaw

Texas coleslaw1 head Napa or Savoy cabbage, shredded
4 carrots, shredded
2 Granny Smith apples, sliced thinly and chopped
1 medium red onion, thinly sliced
1 cup pecans, toasted and chopped

Orange Chili Dressing

1 T. Dijon mustard
1 T. hot water
1/3 cup extra virgin olive oil
1 teaspoon pure maple syrup
½ teaspoon cayenne pepper
½ teaspoon ground cumin
1 large orange, juiced
½ cup Greek yogurt
salt & pepper to taste

Mix all vegetables, apples and nuts in a salad bowl. Put aside.
Wisk together well all dressing ingredient. Add to cabbage mixture and place in refrigerator until ready to eat. Easy… and yummy!
