Parmesan Crusted Alaskan Cod
2 pounds of Alaskan Cod (or other fish)
½ cup of grated Parmesan Cheese
½ cup Oat Bran
2 Tablespoons Virgin Coconut Oil
On a plate, mix parmesan cheese and oat bran. In a large wide bowl, beat 2 eggs. Heat a saucepan and add 3 heaping tablespoons of coconut oil. Wash and pat dry cod. Dip cod into egg and then into parmesan-oat bran mix. Gently place cod into heated coconut oil. On medium heat, let the cod brown on one side, then gently turn over. It is better to use cod pieces that are of uniform thickness and not too thick.
This crust is so delicious that you don’t need salt or seasoning. Yum!
