4 to 5 fillets fresh-frozen Alaskan Cod
3 tablespoons Oat Flour
3 tablespoons grated Parmesan Cheese
1 heaping tablespoon Coconut Oil
Rinse the fillets and lightly pat dry. On a plate, mix the oat flour and parmesan cheese. Dip fillets into the mixture, and place in a hot pan with coconut oil. Pan fry on each side, turning only once. Serve on a bed of brown rice with a green salad.
