Curried Carrot Soup

6 cups Carrots, shredded
1 ½ cups Sweet White Onion
3 tablespoons fresh Garlic,
1 bunch Parsley, stems removed
Chicken Broth to barely cover
½ cup Coconut Cream
2 tablespoons pure Maple Syrup
2 tablespoons mild Yellow Curry
Garlic Salt and Pepper to taste

In a soup pot, place all ingredients.  On medium heat, simmer ingredients until carrots are soft.  Now you can either use an immersion hand blender or carefully blend the ingredients in a regular blender until smooth. Add remaining ingredients to taste. This soup can be simmered on very low to allow it to thicken, or if you put just the right amount of chicken broth in it, then it should be pretty thick. This soup is delicious and healthy.
