Simple Cowboy Stew
cowboy stew4 to 5 lbs. Stew Meat, cubed
2 lbs. Red Potatoes, washed and cubed
1 bag of small Carrots, peeled and washed
½ Sweet Onion, chopped
2 cloves Garlic, minced
16 oz. of prepared Salsa (medium heat)
Garlic Salt and Pepper to taste
2 to 3 tablespoons Pure Maple Syrup, or to taste

Brown the stew meat in some butter or coconut oil.  Place browned meat with all the juices in a crock-pot or stew pot and add the remaining ingredients.

Set crock-pot on high heat for 6 to 7 hours.  If using a stew pot, place in oven at 325° for approximately 3 to 4 hours.  The stew is done when the meat falls apart. Serve with a big green salad and homemade corn bread. Yum!
