Lemon Basil Chicken with Coconut Water and Sour Cream Gravy
Lemon Basil Chicken
8 Chicken Thighs or Breasts, washed and patted dry
1 giant heaping tablespoon of organic Coconut Oil
3 to 5 tablespoons Dried Basil
3 to 4 Lemons cut in half
Garlic Salt and Pepper, to taste

Coconut Milk or the Water that was left in can after coconut cream was removed
3 tablespoons of Cultured Sour Cream, or Plain Yogurt
½ teaspoon of Lecithin
Garlic Salt to taste

In large skillet, heat coconut oil to just before it smokes.  Now add chicken.  Brown one side thoroughly, and sprinkle top of chicken with garlic salt and basil.  When chicken is well browned, turn over, and sprinkle the other side with garlic salt and dried basil.  Now spritz lemon juice all over chicken pieces, cover and let simmer until done.  After chicken is cooked remove chicken from pan, and add the gravy ingredients.  On low, stir all ingredients together, and simmer for approximately 5 minutes.  Serve on brown rice and pour gravy on top.  This is delicious!
