ChickenOven Fried Chicken

¼ cup Vegenaise Mayonnaise
1 teaspoon Dried Parsley Flakes
1 tablespoon + ¼ teaspoon Garlic Powder
¼ teaspoon Pepper
¼ cup freshly grated Parmesan Cheese
1 cup Multigrain Cracker Crumbs (about 20 crackers)
1¼lb. Chicken Breast Strips or 3 pounds of cut-up chicken pieces

Preheat oven to 400°.

Stir the first 5 ingredients together in a medium-size bowl.  Grind up crackers and place in a shallow bowl. 

Dip chicken into the mayonnaise mixture, and then dredge into the cracker crumbs.  Place the chicken on a baking sheet.  Bake the chicken strips for 20, or longer for the pieces of chicken.  Yum!
