Peach Cobbler

Peach Cobbler6 to 8 peaches, skins removed and sliced
2 cups brown sugar
1 cup oat flour
½ cup flax meal
1 ½ cups whole wheat pastry flour
2 tablespoons cinnamon
¾ cup salted butter
 
Place sliced peaches in 8 x 12 inch or larger baking dish. Sprinkle 1 tablespoon of cinnamon on top of peaches and some of the brown sugar. In a large mixing bowl, combine softened butter with all dry ingredients. Use you hand and mix well; the mixture should feel crumbly. Sprinkle on top of peaches; shake a little cinnamon on top.  Bake at 350° for approximately 30 to 40 minutes. 

Top with vanilla ice cream or whipped cream…Yum Yum Yum!
