Pesto Brown Rice with Shrimp and Mushrooms
pesto brown rice with shrimp and mushrooms
4 cups Instant Brown Rice
cooked in Chicken Broth
1 pound fresh Large Shrimp
with shells on
½ cup Mushrooms, sliced
1 whole Sweet Onion,
3 cloves of Garlic, minced
2 cups (more or less) Homemade Pesto
2 tablespoons Butter
2 to 4 tablespoons Coconut Oil

In a large fry pan heat up butter and coconut oil. Add onion and garlic and sauté until translucent. Add mushrooms and sauté along with garlic and onions for a few minutes. Now add rice and stir fry for about 5 minutes. Place the stir fry rice in a bowl and heat pan again.  Add more butter and coconut oil. Place all of the shrimp in the pan and cook quickly on both sides. Don't overcook the shrimp and turn only once. Now add all the stir fry rice mixture and stir fry all together for a few minutes. Add pesto and heat for a few more minutes. Yum!
