Shredded Tex-Mex Layered Salad
with Creamy Lime Dressing

Romaine Lettuce
Bell Peppers (red or green)
Black Beans
Cheese of choice
Shredded Chicken or Beef

2 tablespoons fresh Cilantro, chopped
1 tablespoon Red Wine Vinegar
1 teaspoon Lime Zest
¼ cup Lime Juice
½ cup Sour Cream (can use non-fat)
1 clove Garlic, smashed
1 tablespoon Honey
½ cup Extra Virgin Olive Oil or Flax Oil
Salt & Pepper to taste

Finely chop the lettuce, slice the onion and bell peppers and layer all ingredients. Make at least two to three layers.  You may add anything you like to this salad; don’t be afraid to try new ideas! Blend Creamy Lime Dressing ingredients until smooth and refrigerate.  Drizzle dressing over salad and serve immediately.
