Tomato Basil Soup
Our signature soup at the Country Cottage Café
tomato soup
6 to 8 large vine-ripened, organic Tomatoes
1 cup fresh Basil
1 cup Whole Cream or Whole Milk (optional)
2 cups Chicken Broth
3 to 4 cloves fresh Garlic, diced
Garlic Salt & Pepper to taste
1/8 cup White Wine (optional)
1 to 3 tablespoons Maple Syrup, unless tomatoes are really sweet
Tabasco or other hot sauce (if you like spicy soup)

Purée all ingredients in a blender. If you want chunky soup, blend half of the soup a little less. Warm, don’t cook this soup for optimum health. If you like a richer soup, you can add 1/8 cup of white wine and simmer on low. Don’t be afraid to experiment and add ingredients like Parmesan cheese. Garnish with some fresh basil. Men, this soup is great for your prostate!
